A date doesn't make a relationship- a date makes a full stomach due to the meal you ate and, hopefully, a good time which is something you haven't had in a while. So the fear of rebound isn't an issue because you won't let it get serious anytime soon.

It may or may not be too soon, you will know the answer to that while you are out.

cut your losses, meet for coffee - if you have a nice time, either extend the date longer or make plans to meet for a meal at another time.
